The weather has been good here in Scotland and we’ve been making full use of our barbecue. I’ve now moved into ‘barbecue anything’ territory. Last week we had barbecued bacon roll for breakfast. This week I’ve been buying fresh pineapples with a view to barbecuing them. Today it was some leftover new potatoes and a red onion doused liberally with my lime and chilli butter.
I sliced and par-boiled the potatoes and quartered the onions. The whole lot went onto the barbecue (the potatoes went on the griddle part).
Lime and Chilli Butter
50g unsalted butter
Juice of one lime (or a couple of tablespoons of the bottled stuff)
Half tsp dried chilli flakes
Sea salt to taste (a couple of pinches usually does it)
Soften the butter in the microwave for 15 seconds. Mix in the other ingredients and use a brush to baste anything you like.
This butter is also great on chicken and even better on corn on the cob.
