Simply Scottish: Marmalade Cake

I was sent Simply Scottish: Cakes and Bakes to review recently. The only way to review a recipe book is to get stuck in and give the recipes a go, I decided to start with an easy looking one!

I’ve never made a loaf cake before so I had to nip to the supermarket to get a loaf tin. After gathering the ingredients, not too many thankfully, I got started. The recipe was easy to follow, even for a novice like myself. Here’s how you do it;

Marmalade Cake Ingredients

115g/4oz butter – softened
90g/3oz light brown sugar
2 eggs
225g/8oz self raising flour
½ teaspoon baking powder
Pinch of salt
Grated zest of an orange
3 tablespoons marmalade
3 tablespoons milk

Marmalade Cake Topping

1 tablespoon marmalade
Juice of 1 orange
Grated zest of 1 orange
Icing sugar

Cream the butter and sugar together. Add the eggs. Sift the flour, salt and baking powder and add slowly. Loosen the mix with the milk. Add the zest and marmalade. Pop the mix in to your greased loaf tin. Whack it in the oven for 55-60 min on 180 (mine took a bit less than this).

Once the marmalade cake has cooled on a wire rack, spread the top with marmalade. Make a drizzle from the orange juice, zest and icing sugar. Cover the cake in the drizzle and eat!
