Mid Week Suppers for the Autumn

Autumn has officially arrived. Time to retire the summer salads in favour of some comfort food. Here’s a week of my favourite Autumn dinners that are easy to prepare and tasty.


Mon: Sesame Chicken & Noodles

An end of Summer, beginning of Autumn dish. Little chicken nugget lovers might be tempted into trying this grown up version for all the family. Click the link above for the recipe.



Tues: Baked potato & homemade coleslaw

You can’t beat a baked potato on an Autumn night. Fill it with my low fat lighter version of coleslaw. If you want to add a bit more substance mix it with a small handful of good cheddar to make savoury cheese.



Wed: Chorizo Hash

This one’s great if you want a 10 min meal but want to avoid pre-packaged stuff.

Thurs: Parmesan chicken and roasted tomato spaghetti

Another one the kids might like, and the base sauce from this recipe comes in so handy for a variety of other dishes.

Fri: Baked sweet potatoes

The combination of sweet potato and hot salsa is perfect for Autumn.

and for dessert chocolate mousse with a hint of chilli.
