Menu Plan: French Onion Soup

Monday: French Onion Soup and Cheese Toasts

I use a Jamie Oliver Recipe as the basis for my soup, although I adjust it to suit the ingredients I have available. This time I used a couple white onions, one red onion

Tuesday: Out for Dinner

Wednesday: Chicken & Bacon Salad

I used some gem lettuce, cucumber, griddled chicken, crispy bacon and honey mustard dressing. Serve with crusty bread.

Thursday: Chilli con Carne, Rice & Tortilla Chips

Friday: Baked Potato and Tuna Mayonnaise


Saturday: Duck & Pancakes, mini kebabs, prawn crackers

Sunday: Out for Dinner

Samsung NC10 Review

This is slightly off piste for me, you know, I’m not really a gadget type even though in the last few months I’ve already bought a Flip Video Camera and now my lovely Samsung Notebook.

It started back at New Year, we don’t really ‘do’ New Year, I realise that some may find this a bit strange given that I live on the doorstep of one of the biggest and most popular parties in the world, Edinburgh’s Hogmanay Street Party.

So instead of partying the night away I ended up playing a couple of online poker tournaments and managed to make around a £350 profit, so I decided to treat myself to a notebook, which as I found out was a smaller version of a laptop minus the disk drive, apparently they aren’t as powerful as a full size laptop but my laptop is a little…ahem…dated and I get just as much power from my notebook as I do my laptop. Well, I did say I wasn’t a gadget type :)

Why a notebook?

Well I fancied something portable that I could take out and do some blogging or work on my project. A notebook offers that, my notebook isn’t much bigger than the last Harry Potter and it offers me seven and a half hours of use without needing to charge.

Why the Samsung NC10?

Initially I simply wanted a notebook and as the Samsung was the newest (and most expensive) it wasn’t at the top of my list. Firstly I ruled out all the notebooks that ran Linux, namely the lower Acer range. I ruled out a Toshiba mainly because of screen size and length of use without needing to charge. Finally it was down to this Acer and the Samsung, the spec for both was pretty similar and with a £60 price gap it took a while to make the final decision. The Samsung won out in the end, the screen size and the battery length were the main reasons, but I have to be honest and say it was the ‘bling’ factor that pushed me over the edge.

During the festive period Edinburgh hosts a winter wonderland, which among other things includes a german market. My husband works in the centre of town and come home with a recipe idea based on something they were selling at the german market. It’s a basic idea but tasted delicious, we ate al fresco in the first spring weather :)

I par-boiled new potatoes and left to dry, I then fried bacon until crispy then added plenty of onions, finally throw in the potatoes, a knob of butter and fry until golden, season with salt and pepper to taste. Serve with corn on the cob to cut through the richness, tasty and simple.

Thursday: Hot Dogs

Friday: Mustard & Marmalade Chicken, lemon couscous with red onion & pine nuts

This recipe comes half from a magazine and half from a restaurant dish I know. Simply mix some wholegrain mustard and marmalade, spread over chicken and grill. I cheat by using couscous already flavoured with lemon and coriander, to that add some toasted pine nuts and fried red onion.

Meal Planning: Potato Skins Edition

I’ve spoken about meal planning in the past, I’ve been doing it for as long as I can remember and while some people consider it a symptom of OCD :) I find that it saves me time, effort, thought, stress and money everyday. I know some people that just have a rotating menu, that’s something I definitely couldn’t cope with, I prefer to collect recipes from magazines, recipe books, meals out and online, these ideas form the basis for my weekly meal plans which are all planned in advanced. Recently I’ve also been incorporating meals that utilise leftover ingredients more which is satisfying, I hate that guilty feeling that you get when you have to throw away food due to a lack of forward planning. To help minimize wastage I always leave at least one day free in case we eat out.

Whilst surfing I found this group that share there meal plans, I realise that this may be a step too far for some but I’ve decided to join and see how it goes, there seems to be a huge variety of recipes and I’m lookinh forward to finding some inspiration from places and cultures afar.

So here’s my meal plan for the week, I’m late publishing, hopefully I’ll rectify this next week.

Monday: Roast chicken, mash, parsnips and gravy

Tuesday: Slow roasted pork belly, mustard mash and apple sauce

The credit crunch and also my love of food and cooking has inspired me to experiment cooking with cheaper cuts. The pork belly was easy to cook and I did enjoy the meal but I found the meat very rich in comparison to say, a pork chop.

Friday: Filled potato skins, ham, onion rings

Erin and I had fun using some leftovers to make the potato skins :)

What’s Project 500?

This update is quite late, but as I mentioned in my last post I’ve been pretty busy. Results are still slow against my target but at least there’s progress.

Bukisa has been the thing that has been capturing my imagination the most recently. I’ve only made a few pounds so far, but the income is definitely passive, the articles I have published continue to make money with no extra effort. I have 13 articles published so far, my target is 20 by the end of this month.
